Favorite Easy Chocolate Chip Muffins
Ingredients
- 1 cup non-dairy yogurt
- 1/3 cup coconut sugar
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup tapioca flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/3 cup chocolate chips
Preparation
Whisk together the yogurt, coconut sugar, and vanilla.
Mix in the flours, baking powder, and salt.
Fold in chocolate chips.
Divide batter into 6 muffins (lined or greased), filling almost to the top.
Bake for 30 minutes at 350F or until firm to the touch when lightly pressing the center.
Cool for 10-15 minutes.
Eat!
