Favorite Easy Chocolate Chip Muffins

Ingredients

  • 1 cup non-dairy yogurt
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips

Preparation

  1. Whisk together the yogurt, coconut sugar, and vanilla.

  2. Mix in the flours, baking powder, and salt.

  3. Fold in chocolate chips.

  4. Divide batter into 6 muffins (lined or greased), filling almost to the top.

  5. Bake for 30 minutes at 350F or until firm to the touch when lightly pressing the center.

  6. Cool for 10-15 minutes.

  7. Eat!
