Easy Nutritious Sweet Potato Blondies

Ingredients

  • 1 1/2 cup baked and mashed sweet potato
  • 1/2 cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla paste or extract
  • 5 tbsp almond milk
  • 1 tbsp coconut flour
  • 1/2 cup ground almonds
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • Chopped nuts to sprinkle on top

Preparation

  1. Preheat oven to 180°C (350°F)

  2. In a bowl, mix the wet ingredients: baked and mashed sweet potato, almond butter, maple syrup, vanilla extract, and almond milk

  3. In another bowl, mix the dry ingredients: coconut flour, ground almonds, baking powder, and pumpkin spice

  4. Combine the wet and dry mixtures until well blended

  5. Pour the batter into a greased baking pan

  6. Sprinkle chopped nuts on top

  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean

  8. Allow to cool before cutting into squares
