Easy Nutritious Sweet Potato Blondies
Ingredients
- 1 1/2 cup baked and mashed sweet potato
- 1/2 cup almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla paste or extract
- 5 tbsp almond milk
- 1 tbsp coconut flour
- 1/2 cup ground almonds
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
- Chopped nuts to sprinkle on top
Preparation
Preheat oven to 180°C (350°F)
In a bowl, mix the wet ingredients: baked and mashed sweet potato, almond butter, maple syrup, vanilla extract, and almond milk
In another bowl, mix the dry ingredients: coconut flour, ground almonds, baking powder, and pumpkin spice
Combine the wet and dry mixtures until well blended
Pour the batter into a greased baking pan
Sprinkle chopped nuts on top
Bake for 20-25 minutes or until a toothpick inserted comes out clean
Allow to cool before cutting into squares
