Quick Blueberry Streusel Sheet Cake
Ingredients
Dough
- 500 g all-purpose flour
- 1 package baking powder
- 120 g sugar
- a pinch of salt
- 250 g low-fat quark
- 150 ml vegetable oil
- 120 ml milk
- 700 g blueberries
- all-purpose flour, for dusting
- butter, for greasing the pan
Streusel topping
- 170 g butter
- 150 g brown sugar
- 250 g all-purpose flour
- powdered sugar, for dusting (optional)
Preparation
Preheat the oven to 180 degrees Celsius (convection: 160 degrees)
Grease a standard baking sheet (38x45 cm)
In a bowl, mix flour, baking powder, sugar, and salt
Add quark, oil, and milk, and knead for 1 minute on the highest speed with a mixer
Roll out the dough on a lightly floured work surface to the size of the baking sheet and place it on the sheet
Wash the blueberries, pat dry, and spread them on the baking sheet
For the streusel, mix butter and sugar in a bowl
Add flour and knead into coarse streusel
Spread the streusel over the baking sheet
Bake for 25 to 30 minutes
Let cool slightly
Before serving, dust with powdered sugar
