Quick Vegan Chocolate Bounty Bars

Ingredients

  • Shredded Desiccated coconut - 2 cups
  • Coconut condensed milk or Maple syrup - 3 tbsp
  • Sea salt - 1/8 tsp
  • Coconut cream - 4 tbsp (thick part)
  • Dark chocolate chunks or Vegan chocolate chunks - 1.5 cups
  • Coconut oil - 2 tsp

Preparation

  1. In a food processor, add desiccated coconut, coconut cream, and maple syrup; pulse for a few seconds until combined, scraping down with a spatula if needed.

  2. Alternatively, use your hands to mix the mixture if you don't have a food processor.

  3. Shape the mixture into small log shapes or desired shapes and arrange on a baking tray lined with parchment paper. Refrigerate for 1 hour or freeze for 20 minutes.

  4. Melt the chocolate with 2 teaspoons of coconut oil in the microwave or over a pan of simmering water.

  5. Dip each bar into the melted chocolate using tongs and place on a cooling rack or greased tray.

  6. Allow the bars to set for half an hour.

  7. Store in the fridge for up to a week and enjoy.
