Quick Vegan Chocolate Bounty Bars
Ingredients
- Shredded Desiccated coconut - 2 cups
- Coconut condensed milk or Maple syrup - 3 tbsp
- Sea salt - 1/8 tsp
- Coconut cream - 4 tbsp (thick part)
- Dark chocolate chunks or Vegan chocolate chunks - 1.5 cups
- Coconut oil - 2 tsp
Preparation
In a food processor, add desiccated coconut, coconut cream, and maple syrup; pulse for a few seconds until combined, scraping down with a spatula if needed.
Alternatively, use your hands to mix the mixture if you don't have a food processor.
Shape the mixture into small log shapes or desired shapes and arrange on a baking tray lined with parchment paper. Refrigerate for 1 hour or freeze for 20 minutes.
Melt the chocolate with 2 teaspoons of coconut oil in the microwave or over a pan of simmering water.
Dip each bar into the melted chocolate using tongs and place on a cooling rack or greased tray.
Allow the bars to set for half an hour.
Store in the fridge for up to a week and enjoy.
