Vegan Chocolate Cups with Berry Jam

Ingredients

  • Vegan chocolate
  • Almond and pecan butter

Raw berry jam

  • 1 cup berries (frozen or fresh)
  • Lemon juice
  • 2 tablespoons maple syrup or to taste
  • 1/4 cup water (more if needed)
  • Pinch of pink salt
  • 3-4 tablespoons chia seeds

Preparation

  1. Blend the berries, lemon juice, maple syrup, water, and pink salt until smooth

  2. Pour the mixture into a jar and mix with the chia seeds

  3. Close the jar and refrigerate overnight

  4. Melt the vegan chocolate

  5. Spoon a layer of melted chocolate into chocolate molds and chill until set

  6. Add a layer of almond and pecan butter, followed by the prepared berry jam

  7. Top with more melted chocolate and chill until firm
