Vegan Cookie Dough Bread

Ingredients

  • 2 cups chickpea flour (I use @bobsredmill found almost everywhere for only like $4)
  • 1 cup sparkling water, I used @sanpellegrino_us
  • 1/4 cup cashew or sunflower butter (I used sunflower)
  • handful of vegan chocolate chips (I used @paschachocolate)

Preparation

  1. Mix all ingredients in a large bowl until creamy. It will be like batter, not a thick dough ball FYI.

  2. Pour into a bread loaf pan.

  3. Sprinkle with more chocolate chips.

  4. Bake at 350 degrees for 30 minutes. Enjoy, I know you’ll love it!

  5. Optionally, spread a bit of ghee or vegan butter on top for a filling snack or breakfast.
