Vegan Healthy Hazelnut Blondies
Ingredients
- 1 tbsp / 30g hazelnut butter or other nut butter
- 1/4 cup 70g apple pulp
- 1/4 cup 90g maple syrup or other
- 1 cup/260 ml plant milk
- 1/3 cup/50g sugar / alternative (I used 30g coconut blossom sugar and 20g erythritol)
- 1+1/2 cup/150g ground hazelnuts
- 2 teaspoons of baking soda
- 1 cup/120g flour (I used wholemeal spelt flour)
Preparation
Preheat the oven to 180°C/350°F with top and bottom heat.
Mix all ingredients, adding the baking powder and flour last.
Bake in a baking pan lined with baking paper for about 45 minutes.
Let it cool down, then cut and optionally decorate with hazelnut butter or cream and hazelnuts.
