Vegan Healthy Hazelnut Blondies

Ingredients

  • 1 tbsp / 30g hazelnut butter or other nut butter
  • 1/4 cup 70g apple pulp
  • 1/4 cup 90g maple syrup or other
  • 1 cup/260 ml plant milk
  • 1/3 cup/50g sugar / alternative (I used 30g coconut blossom sugar and 20g erythritol)
  • 1+1/2 cup/150g ground hazelnuts
  • 2 teaspoons of baking soda
  • 1 cup/120g flour (I used wholemeal spelt flour)

Preparation

  1. Preheat the oven to 180°C/350°F with top and bottom heat.

  2. Mix all ingredients, adding the baking powder and flour last.

  3. Bake in a baking pan lined with baking paper for about 45 minutes.

  4. Let it cool down, then cut and optionally decorate with hazelnut butter or cream and hazelnuts.
