Vegan Liquorice Meringues with Berries

Ingredients

  • 1 can of aquafaba (chickpea water)
  • 1 teaspoon lemon juice
  • 1 deciliter sugar
  • 15 pieces of Turkish pepper (hard licorice) - brand Fazer

Preparation

  1. Set the oven to 100 degrees Celsius.

  2. Add the aquafaba and lemon juice to a bowl and whisk for one minute.

  3. Slowly add the sugar, a little at a time, and whisk for about 3 more minutes or until the meringue is fluffy and can be held upside down.

  4. Crush the licorice into small pieces using a mortar and pestle.

  5. Add the crushed licorice to the meringue and stir carefully.

  6. Place 8 dollops of the mixture on a baking tray to form 8 large meringues.

  7. Bake in the oven for 2 hours at 100 degrees Celsius.

  8. Serve with berries when done.
