Vegan Liquorice Meringues with Berries
Ingredients
- 1 can of aquafaba (chickpea water)
- 1 teaspoon lemon juice
- 1 deciliter sugar
- 15 pieces of Turkish pepper (hard licorice) - brand Fazer
Preparation
Set the oven to 100 degrees Celsius.
Add the aquafaba and lemon juice to a bowl and whisk for one minute.
Slowly add the sugar, a little at a time, and whisk for about 3 more minutes or until the meringue is fluffy and can be held upside down.
Crush the licorice into small pieces using a mortar and pestle.
Add the crushed licorice to the meringue and stir carefully.
Place 8 dollops of the mixture on a baking tray to form 8 large meringues.
Bake in the oven for 2 hours at 100 degrees Celsius.
Serve with berries when done.
