Simple Vegan Honey Made with Tea and Sugar

Ingredients

  • 1 cup natural apple juice
  • 3 cups water
  • 2 bags dandelion tea
  • 2 bags chamomile & rose tea
  • 1 tablespoon lemon juice
  • 4 cups sugar

Preparation

  1. Pour the apple juice and water into a crock pot and add in the tea bags.

  2. Turn the crock pot up to high and let the tea bags steep for an hour.

  3. Take the bags out, add in the sugar.

  4. Leave the crock pot on and uncovered overnight or at least 8 hours.

  5. It will seem very thin and runny but as it cools it will thicken. Makes roughly 2 pints.

Tips

  1. Use a crock pot to avoid scorching or boiling too hard; it allows hands-off cooking for 8-10 hours.

  2. Alternatively, cook on the stove top over low heat with a slow bubble, but monitor to prevent burning or exceeding 300 F.

  3. This recipe uses common ingredients and can be stored indefinitely in the fridge without crystallizing.
