Banana Pancakes with Berry Yoghurt Blend

Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas
  • 1/2 cup almond milk
  • 1/2 tablespoon baking powder
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • Optional: 1/2 teaspoon cinnamon

Preparation

  1. Combine all ingredients in blender. Blend until smooth

  2. Allow batter to rest 5-10 minutes (liquid will be absorbed)

  3. Preheat non-stick pan over medium heat. Pour in 1/4 cup of batter

  4. Cook until you can easily slide a spatula underneath. Flip. Cook for another 1-2 minutes on the second side

  5. Repeat until all the batter is used up

  6. Add your toppings of choice and enjoy!
