Vegan Blender Pancakes

Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups whole wheat pastry flour
  • 4 teaspoons baking powder
  • 3 large or 4 small ripe bananas
  • 1 1/2 cups almond milk
  • 1 1/2 teaspoons apple cider vinegar

Preparation

  1. Add rolled oats to a high speed blender and pulse until flour forms. Then add whole wheat pastry flour and baking powder and pulse again.

  2. Add bananas, almond milk, and apple cider vinegar and blend until a smooth batter forms. Let it sit for a few minutes to thicken.

  3. Scoop the batter with a cookie scoop onto an oiled skillet or nonstick pan. Add berries or other fruit before flipping, and serve with shot glasses of maple syrup.
