Cinnamon Spiced Pear Bread for Family Breakfast

Ingredients

  • 500g ripe pears, core removed
  • 300g oats
  • 100g butter
  • 3 eggs or chia eggs
  • 1 teaspoon cinnamon
  • 1.5 teaspoons baking powder
  • 100g chocolate chips (optional)

Preparation

  1. Blend the pears to a smooth pulp.

  2. Whisk up the butter and then stir in the rest of the ingredients except the pear purée.

  3. Finally add the pear purée and stir well.

  4. Pour into a greased and lined baking tin. (A loaf tin, 15cm cake tin, or 20cm square tin can be used.)

  5. Bake at 180°C for 40 minutes.

  6. Leave to cool before slicing and serving.

Tips

  1. Can use chia eggs instead of eggs for an egg-free version.

  2. Serve drizzled with peanut butter and sliced banana for breakfast.
