Banana Oat Breakfast Squares
Ingredients
- 3 ripe bananas
- 200g oats (ground or whole rolled)
- 100g butter or plant-based butter
- 3 eggs or 3 chia eggs
- 1.5 teaspoons baking powder
- 1 teaspoon cinnamon
Optional additions
- 1 extra banana and/or 1 tablespoon oats for decoration
- Nuts, seeds, berries, or dark chocolate
- 50g caster sugar, coconut sugar, or honey
Preparation
Preheat the oven to 170°C
Whisk the butter or plant-based butter by hand.
Mash the bananas really well or blend to a pulp.
Add the mashed bananas to the butter mixture.
Whisk the eggs with a fork quickly and add to the mixture.
Stir in the oats, cinnamon, and baking powder and mix well.
Pour the mixture into a 20x20 cm square baking tray.
Sprinkle with oats for decoration and add a sliced banana if using.
Bake for about 35 minutes or until a knife inserted comes out clean.
