Banana Oat Breakfast Squares

Ingredients

  • 3 ripe bananas
  • 200g oats (ground or whole rolled)
  • 100g butter or plant-based butter
  • 3 eggs or 3 chia eggs
  • 1.5 teaspoons baking powder
  • 1 teaspoon cinnamon

Optional additions

  • 1 extra banana and/or 1 tablespoon oats for decoration
  • Nuts, seeds, berries, or dark chocolate
  • 50g caster sugar, coconut sugar, or honey

Preparation

  1. Preheat the oven to 170°C

  2. Whisk the butter or plant-based butter by hand.

  3. Mash the bananas really well or blend to a pulp.

  4. Add the mashed bananas to the butter mixture.

  5. Whisk the eggs with a fork quickly and add to the mixture.

  6. Stir in the oats, cinnamon, and baking powder and mix well.

  7. Pour the mixture into a 20x20 cm square baking tray.

  8. Sprinkle with oats for decoration and add a sliced banana if using.

  9. Bake for about 35 minutes or until a knife inserted comes out clean.
