Easy Banana Oat Breakfast Cookies
Ingredients
- 2-3 ripe bananas
- 2 cups rolled oats (regular or gluten-free)
- 1/4 cup hemp hearts
- 1/4 cup chopped pecans
- 1 egg
- 1 tsp vanilla extract
- sprinkle of sea salt
- 1 tsp cinnamon
- 1/3 cup shredded coconut
Preparation
Mash 2-3 ripe bananas in a large bowl.
Add 2 cups rolled oats, 1/4 cup hemp hearts, 1/4 cup chopped pecans, 1 egg, 1 tsp vanilla extract, a sprinkle of sea salt, 1 tsp cinnamon, and 1/3 cup shredded coconut to the bowl.
Bake the mixture at 375 degrees Fahrenheit for 15 minutes.
You can add whatever nuts, dried fruits, or even chocolate chips as desired.
