Easy Banana Oat Breakfast Cookies

Ingredients

  • 2-3 ripe bananas
  • 2 cups rolled oats (regular or gluten-free)
  • 1/4 cup hemp hearts
  • 1/4 cup chopped pecans
  • 1 egg
  • 1 tsp vanilla extract
  • sprinkle of sea salt
  • 1 tsp cinnamon
  • 1/3 cup shredded coconut

Preparation

  1. Mash 2-3 ripe bananas in a large bowl.

  2. Add 2 cups rolled oats, 1/4 cup hemp hearts, 1/4 cup chopped pecans, 1 egg, 1 tsp vanilla extract, a sprinkle of sea salt, 1 tsp cinnamon, and 1/3 cup shredded coconut to the bowl.

  3. Bake the mixture at 375 degrees Fahrenheit for 15 minutes.

  4. You can add whatever nuts, dried fruits, or even chocolate chips as desired.
