Cranberry Apple Baked Oats Breakfast

Ingredients

  • 2 cups rolled oats (gluten-free preferred)
  • 1.5 cups unsweetened almond milk
  • 1 small apple, diced (about 1 cup)
  • 1/2 cup cranberries
  • 1/2 teaspoon baking powder
  • 2 tablespoons honey
  • 1 tablespoon cinnamon
  • 1 scoop collagen (optional)
  • 1 egg

Preparation

  1. Preheat oven to 350°F

  2. Combine all ingredients in a bowl and mix well

  3. Spray a pan or skillet with nonstick spray

  4. Bake for 40 minutes

  5. Top with plain kefir and cinnamon for added protein and probiotics

  6. Use gluten-free oats if preferred, and consider adding collagen for extra protein

  7. This recipe is great for meal prep and can be enjoyed as breakfast, snack, or dessert
