Baked Oatmeal Mini Muffins

Ingredients

  • baked oatmeal mini muffins
  • 3 cups whole rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1.5 cups unsweetened almond milk
  • 2 tablespoons almond butter
  • 1/4 cup honey
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seeds

Preparation

  1. Preheat oven to 350 degrees

  2. Spray a mini muffin tray with non-stick spray

  3. Combine oats, baking powder, cinnamon and salt in a large bowl

  4. In a separate bowl whisk together the almond milk, almond butter, honey, chia seeds and ground flax seeds

  5. Make sure almond butter is totally dispersed

  6. Let sit for about 5 minutes

  7. Add wet ingredients to dry and mix to combine

  8. Scoops oat mixture into mini muffin tray, filling each slot about 3/4 of the way

  9. Bake for about 20 minutes until muffins are set and tooth pick comes out clean

  10. Let cool in pan for about 10 minutes before removing muffins to a cooling rack (this is important so muffins have time to set and don’t break apart)

  11. Place in refrigerator or in freezer

  12. Warm in toaster oven or microwave before serving or serve cold out of the refrigerator
