Chewy Sticky Date Cookies

Ingredients

  • 1 1/2 cups chopped pitted dates
  • 1/2 cup coconut sugar
  • 125g unsalted butter or coconut oil
  • 1 tsp bicarbonate of soda
  • 1 cup whole-wheat or spelt flour
  • 1 cup rolled oats
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Preparation

  1. Preheat oven to 160C and line a baking tray with parchment paper.

  2. Place the dates, sugar and butter in a small saucepan over medium heat and stir until the butter is melted and the dates are soft. Add the bicarbonate of soda, mix and set aside to cool.

  3. Place the flour, oats, egg, cinnamon and vanilla in a large bowl. Add the date mixture and mix to combine.

  4. Shape into heaped tablespoon balls, flatten slightly and place on baking tray.

  5. Bake for 12–14 minutes or until golden.

  6. Allow to cool on trays.
