Snickerdoodle Oatmeal Breakfast Cookies
Ingredients
- 1 cup mashed, cooked sweet potato
- 1 cup gluten free oatmeal
- 1/3 cup nut butter
- 2 tbsp maple syrup
- 1 tsp cinnamon
- 2 tbsp coconut sugar
- 1 tsp vanilla extract
Topping
- 1/2 tbsp coconut sugar
- 1/2 tsp cinnamon
Preparation
Preheat oven to 350°F
Mix together the ingredients with a spatula, then form into cookies
Bake for 18-20 minutes
Immediately after removing from the oven, sprinkle with a mixture of 1/2 tablespoon coconut sugar and 1/2 teaspoon cinnamon, then let cool
