Snickerdoodle Oatmeal Breakfast Cookies

Ingredients

  • 1 cup mashed, cooked sweet potato
  • 1 cup gluten free oatmeal
  • 1/3 cup nut butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract

Topping

  • 1/2 tbsp coconut sugar
  • 1/2 tsp cinnamon

Preparation

  1. Preheat oven to 350°F

  2. Mix together the ingredients with a spatula, then form into cookies

  3. Bake for 18-20 minutes

  4. Immediately after removing from the oven, sprinkle with a mixture of 1/2 tablespoon coconut sugar and 1/2 teaspoon cinnamon, then let cool
