Cinnamon Vanilla Pecan Butter
Ingredients
- 3 cups pecan halves
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 1 tablespoon coconut sugar (optional)
Preparation
Place pecan halves on a baking sheet and toast for 3 to 4 minutes until golden brown. If you don't have a toaster, set the oven to 350ºF and bake for 5 to 10 minutes.
Transfer the pecans into a food processor and process on high until they form a smooth, creamy butter. Scrape down the sides as needed to help the nut butter along.
Add cinnamon, vanilla, and sweetener if using, and process again until combined.
Transfer to a glass jar and enjoy. If kept in a cool dark place, it should keep for at least 3 weeks.
