Tahini Coconut Sugar Cookies

Ingredients

  • 1/4 cup tahini
  • 1/2 cup coconut sugar
  • 1/4 teaspoon cinnamon
  • 1 to 1.5 cups oat flour

Preparation

  1. Mix the batter together until it is thick enough that it won't spread out when placed on a baking sheet.

  2. If the batter is too wet, add a little more oat flour; if too dry, add a little plant-based milk.

  3. Drop spoonfuls of batter onto a baking sheet and spread into circles.

  4. Bake at 350°F for 12 minutes or until golden.

  5. Let cool for at least 20 minutes to allow them to solidify.
