Healthier Cinnamon Sugar Acorn Squash
Ingredients
- 1 acorn squash
- 2 tbsp coconut oil
- 2 tbsp coconut sugar
- 2 tsp cinnamon
Preparation
Cut 1 acorn squash in half, scoop out the seeds, and cut into cubes to allow better flavor absorption.
Melt 2 tbsp of coconut oil and brush it over the squash.
In a small bowl, mix 2 tbsp coconut sugar and 2 tsp cinnamon.
Sprinkle the sugar and cinnamon mixture over the squash.
Bake at 400 degrees Fahrenheit for about 60 minutes.
Enjoy with vanilla yogurt and granola if desired.
