Healthier Cinnamon Sugar Acorn Squash

Ingredients

  • 1 acorn squash
  • 2 tbsp coconut oil
  • 2 tbsp coconut sugar
  • 2 tsp cinnamon

Preparation

  1. Cut 1 acorn squash in half, scoop out the seeds, and cut into cubes to allow better flavor absorption.

  2. Melt 2 tbsp of coconut oil and brush it over the squash.

  3. In a small bowl, mix 2 tbsp coconut sugar and 2 tsp cinnamon.

  4. Sprinkle the sugar and cinnamon mixture over the squash.

  5. Bake at 400 degrees Fahrenheit for about 60 minutes.

  6. Enjoy with vanilla yogurt and granola if desired.
