Nutritious Vegan Gluten-Free Peanut Butter Cookies

Ingredients

  • 1 cup natural peanut butter, creamy or crunchy (or almond butter)
  • 1 cup coconut sugar
  • 6 tablespoons almond milk
  • 2 teaspoons vanilla extract
  • 1 cup gluten free flour or almond flour
  • 1 teaspoon baking soda
  • generous pinch of mineral salt (if peanut butter is unsalted)

Preparation

  1. Begin by stirring peanut butter and coconut sugar together in a bowl. Once mixed well, add milk and vanilla extract and combine. Then pour in flour, baking soda, and a pinch of mineral salt.

  2. Form balls with the dough and flatten on the baking sheet using a fork.

  3. Bake for 10-13 minutes. The longer, the crispier; the shorter, the gooier.
