Mango and Coconut Ice Lollies

Ingredients

  • 2 large ripe mangoes, peeled and cubed
  • 1/2 can coconut milk
  • 2 tsp vanilla paste
  • 2 tbsp maple syrup

Optional

  • white chocolate
  • pistachios
  • unsweetened desiccated coconut

Preparation

  1. Put all the ingredients into a blender and blend until smooth. Taste and add more maple syrup if needed, remembering that the flavor becomes more subtle when frozen.

  2. Pour the mixture into ice lolly molds, insert the sticks, and freeze for a few hours or overnight.

  3. If using the optional coating, melt the white chocolate in a mug with 30-second intervals in the microwave, stirring in between, for 1 to 1.5 minutes. Dip the top of the frozen lollies into the chocolate quickly, as it sets fast, and add decorations if desired.

  4. Wrap individually in greaseproof paper and store in the freezer.

  2. They’re related to cashews and pistachios.

  3. The shape of the mango inspired the famous paisley pattern.

  4. It takes up to 6 years for a mango tree to bear fruit and a further 4 months for the fruit to ripen before being individually harvested by hand.

  5. If you want to speed up the ripening of a mango, put it in a paper bag for a day or two.

  6. Mangos are a good source of vitamin C and vitamin A.
