Healthy Magic Shell Nice Cream
Ingredients
Magic shell
- 2-4 tbsp chocolate chips of choice
- 1-2 tsp coconut oil
Nice cream
- 6 frozen bananas or 1 14oz can full fat coconut milk frozen overnight into ice cubes
- 1-2 tsp vanilla
- maple syrup or sweetener of choice to taste (optional)
- pinch salt
- 2+ tbsp nut butter or coconut milk cream for creaminess (optional)
- up to 1/4 cup almond milk only if needed
Preparation
Prepare magic shell by microwaving chocolate chips and coconut oil together in 20-30 second increments, stirring in between, until fully melted.
To make nice cream, blend ingredients together in a high-powered blender or food processor until smooth, using a tamper or stopping to scrape down sides as needed. Use as little liquid as possible for maximum thickness and be careful not to overblend.
Transfer nice cream to a jar and quickly pour chocolate mixture over the top. It may harden immediately or can be placed in the freezer for a few minutes to set, but consume right away as it melts quickly.
Tips
Add homemade caramel, such as coconut milk and coconut sugar mixture, for a caramel core if desired.
For best results with nice cream, freeze bananas or coconut milk overnight and add nut butter or coconut cream for extra creaminess.
Adjust sweetness and liquid amounts to taste, using minimal almond milk to maintain thickness.
