Mango and Chocolate Ice Cream Cups

Ingredients

  • 1 ripe banana
  • 1/2 mango
  • 1/2 can well-chilled coconut milk (without the water)
  • 1 tablespoon powdered mango
  • 150 grams dark chocolate
  • Coconut oil
  • Additional dark chocolate for topping
  • Shredded coconut for sprinkling

Preparation

  1. Blend together 1 ripe banana, 1/2 mango, 1/2 can of well chilled coconut milk (without the water), and 1 tablespoon powdered mango

  2. Melt 150 grams dark chocolate with some coconut oil in the microwave

  3. Using a silicone brush, cover 6 silicone muffin cases with the melted chocolate

  4. Chill for 5 minutes

  5. Pour in the blended mixture

  6. Freeze until well set

  7. When frozen, cover the top with more chocolate and sprinkle some coconut

  8. Chill and enjoy
