Mango and Chocolate Ice Cream Cups
Ingredients
- 1 ripe banana
- 1/2 mango
- 1/2 can well-chilled coconut milk (without the water)
- 1 tablespoon powdered mango
- 150 grams dark chocolate
- Coconut oil
- Additional dark chocolate for topping
- Shredded coconut for sprinkling
Preparation
Blend together 1 ripe banana, 1/2 mango, 1/2 can of well chilled coconut milk (without the water), and 1 tablespoon powdered mango
Melt 150 grams dark chocolate with some coconut oil in the microwave
Using a silicone brush, cover 6 silicone muffin cases with the melted chocolate
Chill for 5 minutes
Pour in the blended mixture
Freeze until well set
When frozen, cover the top with more chocolate and sprinkle some coconut
Chill and enjoy
