Healthy Beef Lasagna with Spinach
Ingredients
- One onion
- 2 garlic cloves
- 500g beef mince (5%)
- 2 chicken stock cubes
- 500ml passata
- 50g dry red lentils
- 8 lasagna sheets
- 500g cottage cheese 0% fat (blended)
- A bag of spinach
- 30g mozzarella
Preparation
Cook the onion and garlic.
Add the beef and brown it.
Add the stock cubes, passata, and lentils.
Add salt, pepper, and herbs.
Let it simmer for 20 minutes to reduce.
Cook the spinach in a separate pan until it is wilted.
Strain the water from the spinach and mix it into the blended cottage cheese.
Layer the beef mixture, lasagna sheets, and cottage cheese mixture in a baking dish, with two sets of layers, and top with mozzarella.
Bake in the oven at 180°C/350°F for about 50 minutes.
