Baked Sweet Potatoes with Toppings

Ingredients

  • 2 medium sweet potatoes
  • 1/2 medium lime
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • roasted chickpea recipe (optional)
  • 1, 19 oz tin black beans
  • 12 cherry tomatoes
  • 2-3 green onions
  • sriracha (optional)

Dilly hummus

  • 1/2 cup hummus
  • 2-4 cloves garlic
  • 1/2 medium lemon
  • 1/4 tsp maple syrup
  • 1-2 tbsp fresh dill
  • 1-2 tbsp water or plant-based milk

Optional additions

  • guacamole recipe (optional)

Preparation

  1. Cut sweet potatoes in half and bake until tender

  2. Prepare dilly hummus by mixing hummus with garlic, lemon juice, maple syrup, dill, and water or plant-based milk until smooth

  3. Drain and rinse black beans

  4. Halve cherry tomatoes and slice green onions

  5. Assemble by placing baked sweet potatoes on a plate, add black beans, dilly hummus, tomatoes, onions, and optional toppings like guacamole and sriracha
