Cauliflower Rice Paella Dinner
Ingredients
- A medium onion, diced
- 350g bag of frozen seafood mix
- 4 bags of frozen cauliflower rice
- Tin of chopped tomatoes
- 2 Star anise
- 2 tbsp Cawkys smokey saffron spice mix
- 1 tsp olive oil
- 2 tbsp parmesan cheese
Preparation
Fry the onion in a tsp olive oil.
Add the tinned tomatoes and spices.
Simmer for 15 minutes.
Add the cauliflower rice and heat through.
Add the seafood mix and cook for 5 minutes to heat through and reduce the sauce.
Remove the star anise and serve.
Add 2 tbsp of parmesan cheese after serving.
Tips
Consider tweaks to make the sauce richer and less watery for next time.
