Cauliflower Rice Paella Dinner

Ingredients

  • A medium onion, diced
  • 350g bag of frozen seafood mix
  • 4 bags of frozen cauliflower rice
  • Tin of chopped tomatoes
  • 2 Star anise
  • 2 tbsp Cawkys smokey saffron spice mix
  • 1 tsp olive oil
  • 2 tbsp parmesan cheese

Preparation

  1. Fry the onion in a tsp olive oil.

  2. Add the tinned tomatoes and spices.

  3. Simmer for 15 minutes.

  4. Add the cauliflower rice and heat through.

  5. Add the seafood mix and cook for 5 minutes to heat through and reduce the sauce.

  6. Remove the star anise and serve.

  7. Add 2 tbsp of parmesan cheese after serving.

Tips

  1. Consider tweaks to make the sauce richer and less watery for next time.
