Sample Eating Goulash

Ingredients

  • 1 pack jackfruit
  • 2 red peppers
  • 1 carrot
  • 1 onion
  • 1 tin of chopped tomatoes
  • 1 stock cube
  • 3 cloves of garlic
  • 1 tbsp paprika
  • 250ml red wine
  • creme fraiche and fresh parsley to serve

Preparation

  1. Begin by preparing the vegetables

  2. Chop the onion into half moons and finely cut the garlic

  3. Leave the carrots and peppers relatively chunky

  4. In a large saucepan begin to sauté the onion until browning, about 5 minutes and then add the carrots and peppers and cook until just beginning to soften

  5. Next add the paprika and then the jackfruit, sauté for one minute and then pour in the wine, let it sizzle for a moment and then add the tomatoes and stock and another 250mls water or more if you want it to be more soupy

  6. Bring to a boil and then simmer for 20 minutes

  7. Serve with a dollop of creme fraiche and lots of fresh parsley
