Crispy Tofu Burger with Slaw and Harissa Mayo

Ingredients

Marinade

  • 250g extra firm tofu
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1-2 tbsp sweetener
  • 1 tsp sesame oil

Batter

  • 1/4 cup flour
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • water

Coating

  • 1 cup cornflakes

Slaw

  • 1/4 small cabbage
  • 1-2 cucumbers

Sauce

  • 1/3 cup vegan mayo
  • 1-2 tsp harissa

Preparation

  1. Cut tofu into 2-3 pieces, pat dry and marinate for at least 20 minutes or even overnight in a mixture of soy sauce, rice vinegar, sweetener and sesame oil

  2. Meanwhile, combine flour, cornstarch, seasoning and water to make the wet batter and add more water if too thick

  3. Prepare a second bowl with crushed cornflakes

  4. Take tofu out of the marinade and set aside to dry while you make the slaw

  5. Thinly slice cabbage and cucumber and place in the marinade and refrigerate

  6. Dip tofu in the wet batter and coat with cornflakes and fry on both sides until golden brown and crispy

  7. Finally, mix vegan mayo and harissa to make the sauce

Assembly

  1. Slice open 2-3 buns and layer with harissa mayo, slaw, crispy tofu and more mayo
