Greek Marinated Chicken Thighs

Ingredients

  • Juice of 2 lemons
  • 2 tablespoons GREEK blend
  • 1/4 cup Extra-Virgin Olive Oil
  • 2-3 pounds boneless, skinless chicken thighs

Preparation

  1. Juice the lemons into a bowl, then add the GREEK blend.

  2. Cover a cutting board with plastic wrap, place chicken thighs on it, cover with another sheet, and flatten with a meat tenderizer for even thickness.

  3. Whisk the marinade one last time, then pour over the chicken thighs and distribute evenly.

  4. Let the chicken marinate for at least 30 minutes or up to overnight.

  5. Pat the thighs dry to improve searing.

  6. Heat a grill pan over high heat and cook the chicken for 5 to 7 minutes per side until cooked through.

  7. Finish with a squeeze of fresh lemon juice.

Notes

  1. Flattening the chicken thighs is optional but helps with quick and even cooking. Be sure to wash the cutting board afterward, as the plastic wrap protects the board.
