Easy and Flavorful Greek Marinated Chicken
Ingredients
- Juice of 2 lemons
- 2 tablespoons GREEK blend
- 1/4 cup Extra-Virgin Olive Oil
- 2-3 pounds boneless, skinless chicken thighs
Preparation
Juice the lemons into a bowl, then add the GREEK blend.
Cover a cutting board with a sheet of plastic wrap, place 1-2 chicken thighs on it, cover with another sheet, and flatten with the flat side of a meat tenderizer to even thickness.
Move each flattened piece to a large dish or casserole dish and repeat until all thighs are done.
Whisk the marinade one last time, pour over the chicken thighs, distribute evenly, and let marinate for at least 30 minutes or up to overnight.
Pat the chicken dry, heat a grill pan over high heat, cook for 5 to 7 minutes per side until cooked through, and finish with a squeeze of fresh lemon.
Tips
Flattening the chicken thighs is optional but helps the meat cook quickly and evenly.
Wash the cutting board after handling raw chicken, as the plastic wrap protects you, not the board.
