Mee Rebus Malaysian Noodle Dish
Ingredients
- Yellow noodles
- Tofu
- Soup greens
- Large green or red chili
- Fried shallots
- Calamansi lime
- Eggs
- Chicken breast
- Dried chilies
- Garlic
- Red onions
- Ginger
- Sweet potatoes or potatoes
- Dried shrimp
- Meat curry powder
- Shrimp paste
- Cornstarch (1 tablespoon)
- Cooking oil
Preparation
Boil the yellow noodles briefly and drain to prevent overcooking.
Fry the tofu until golden and cut into pieces.
Boil the eggs until hard-boiled.
Fry the chicken breast and then shred it.
Blend the dried chilies, garlic, red onions, and ginger until fine.
Boil the sweet potatoes or potatoes until soft, then blend them.
Blend the dried shrimp until fine.
Heat cooking oil in a pan and stir-fry the blended chili mixture.
Add meat curry powder and shrimp paste, and cook until aromatic.
Add water or meat stock if available, then stir in the blended potato mixture and blended dried shrimp.
Bring the mixture to a boil, add the cornstarch slurry, and adjust salt and sugar to taste until well-balanced.
Serve the noodles with the sauce, topped with tofu, eggs, shredded chicken, soup greens, chili, fried shallots, and calamansi lime.
