Malaysian Spicy Beef Dendeng
Ingredients
- 500g beef, thinly sliced
- 1 large onion, finely ground
- 4 shallots, finely ground
- 3 cloves garlic, finely ground
- 1-inch piece ginger, finely ground
- 2 stalks lemongrass
- 3 kaffir lime leaves
- 1 cinnamon stick
- 1 star anise
- 1 scoop chili blend
- 1/2 cup sweet soy sauce
- A little tamarind juice
- Beef cooking liquid
Preparation
Thinly slice the beef and boil it until tender, then pound each slice in a mortar.
Fry the pounded beef briefly, ensuring not to overcook it or it will become tough, and set it aside.
Sauté the finely ground ingredients until crispy, then remove from heat.
Using the same oil, sauté the lemongrass, star anise, and cinnamon stick until fragrant.
Once fragrant, add the chili blend and a little beef cooking liquid, and cook until oil separates.
Add the sweet soy sauce, tamarind juice, beef, sugar, and salt.
Finally, add the fried ground ingredients from earlier, stir well, and it is ready.
