Perfect Turkish Stuffed Kofte
Ingredients
Filling
- 1/2 cup vegetable oil
- 400 grams ground meat
- 3 onions
- 1 tablespoon tomato paste
- 1 tablespoon pepper paste
- 1 teaspoon black pepper
- 1 teaspoon sweet red pepper flakes
- 1 teaspoon red pepper flakes
- 1 teaspoon cumin
- 1 cup walnut pieces
- a handful of parsley
- 1 tablespoon butter
Dough
- 2.5 cups fine bulgur
- 1 cup semolina
- 3 cups boiling water
- 1 egg
- 1 cup flour
- 1 teaspoon pepper paste
- 1 teaspoon tomato paste
- 1 teaspoon salt
- 1 teaspoon red pepper
- 1 teaspoon cumin
- 1 teaspoon black pepper
Preparation
First, add the vegetable oil to a pan and sauté the cubed onions.
When the onions are browned, add the ground meat and continue sautéing.
Once the meat starts to brown, add the pepper paste, tomato paste, and all the spices, stir, and turn off the heat.
After turning off the heat, add the butter and mix.
Finally, add the walnut pieces and parsley, and the filling is ready.
In a large bowl, combine the bulgur and semolina.
Pour boiling water over it, cover with plastic wrap, and let it sit for 30 minutes.
Add the spices, egg, and pastes, and knead for at least 15 minutes.
Add the flour in three stages and knead for another 15 minutes.
After kneading, add 2 tablespoons of water and begin shaping the dough.
Stuff with the filling and seal the stuffed kofte; enjoy!
