Turkish Stuffed Bulgur Köfte

Ingredients

  • 2 cups fine bulgur
  • 1 cup semolina
  • 1.5 cups boiling water
  • Half tea cup flour
  • 1 egg
  • 1 tablespoon tomato paste
  • 1 teaspoon red pepper flakes
  • Half teaspoon black pepper
  • Salt to taste

Filling

  • 750g ground meat
  • 125g butter
  • 3 onions
  • 3 teaspoons paprika
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • Optional walnuts
  • Salt
  • Half bunch parsley

For frying

  • Plenty of vegetable oil

Preparation

  1. Mix the fine bulgur and semolina with boiling water and let it rest until the water is absorbed.

  2. Add flour, egg, tomato paste, red pepper flakes, black pepper, and salt to the bulgur mixture, then knead into a smooth dough.

  3. For the filling, melt butter in a pan and sauté chopped onions until soft.

  4. Add ground meat and cook until browned, then stir in paprika, red pepper flakes, black pepper, salt, optional walnuts, and chopped parsley.

  5. Shape the dough into small balls, make a hollow in each, stuff with the filling, and seal to form oval shapes.

  6. Heat plenty of vegetable oil in a deep fryer or pan and fry the stuffed köfte until golden brown and crispy.

  7. Drain on paper towels and serve hot.

Notes

  1. The water glass measurement used is 200ml, and this recipe yields approximately 20 pieces.
