Turkish Stuffed Meatballs

Ingredients

Outer

  • 3.5 cups fine bulgur
  • 1 cup semolina
  • 4.5 cups hot water
  • 1 egg
  • 1 cup flour
  • 1 tablespoon tomato paste
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • Salt

Filling

  • 1/2 cup vegetable oil
  • 2 tablespoons butter
  • 750 grams ground meat
  • 6 medium onions
  • A handful of parsley
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper powder
  • 1 cup coarsely chopped walnuts

Preparation

Outer dough

  1. Soak the bulgur and semolina in hot water for 30 minutes.

  2. Add all the ingredients and mix with a stand mixer using the dough hook.

  3. Wet your hands while shaping the dough.

Filling

  1. Heat vegetable oil and butter in a pan, add ground meat and cook.

  2. Add onions and cook until they disappear.

  3. Turn off the heat, add all remaining ingredients and mix.

Cooking

  1. Fry in deep oil.
