Turkish Fellah Köfte with Tomato Sauce

Ingredients

  • 2 cups fine bulgur
  • 1 cup semolina
  • 3 tablespoons flour
  • 1 egg
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste
  • Salt
  • Cumin

Sauce

  • 1 cup olive oil
  • 5-6 cloves garlic
  • 2 tablespoons pepper paste
  • 4 grated tomatoes

Garnish

  • 1 bunch parsley

Boiling liquid

  • 2 liters water
  • 1 teaspoon citric acid
  • Salt

Preparation

  1. Knead all ingredients for the köfte with lukewarm water until a paste consistency is achieved.

  2. Shape the dough into chickpea-sized pieces, make a dent with your finger, and arrange on a floured tray.

  3. For the sauce, heat oil in a pan, lightly sauté crushed garlic, add pepper paste and grated tomatoes, and cook until the sauce thickens.

  4. Add the köftes gradually to boiling water and cook for 5 minutes; remove with a slotted spoon to a serving plate.

  5. Spread the cooked sauce over the köftes and garnish with finely chopped parsley.
