Turkish Fellah Köfte with Tomato Sauce
Ingredients
- 2 cups fine bulgur
- 1 cup semolina
- 3 tablespoons flour
- 1 egg
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- Salt
- Cumin
Sauce
- 1 cup olive oil
- 5-6 cloves garlic
- 2 tablespoons pepper paste
- 4 grated tomatoes
Garnish
- 1 bunch parsley
Boiling liquid
- 2 liters water
- 1 teaspoon citric acid
- Salt
Preparation
Knead all ingredients for the köfte with lukewarm water until a paste consistency is achieved.
Shape the dough into chickpea-sized pieces, make a dent with your finger, and arrange on a floured tray.
For the sauce, heat oil in a pan, lightly sauté crushed garlic, add pepper paste and grated tomatoes, and cook until the sauce thickens.
Add the köftes gradually to boiling water and cook for 5 minutes; remove with a slotted spoon to a serving plate.
Spread the cooked sauce over the köftes and garnish with finely chopped parsley.
