Easy Turkish Raw Bulgur Köfte
Ingredients
- 3 cups fine bulgur
- 2 cups hot water
- 3 tablespoons tomato paste
- 1 tablespoon hot pepper paste
- 1/2 cup olive oil
- 3 tablespoons pomegranate molasses
- 3 tablespoons isot pepper
- 1 tablespoon ground red pepper
- 1 onion
- 3 cloves garlic
- Salt
- Black pepper
- Red pepper flakes
- Cumin
Preparation
Put the bulgur in a kneading bowl and pour the hot water over it, then mix and let it sit while preparing other ingredients.
Grate the onion and squeeze out its juice, then add it to the bulgur mixture.
Pour the olive oil over the isot pepper and let it sit for 5 minutes, then add this mixture to the bulgur.
Add the tomato paste, hot pepper paste, and all the spices, then knead well.
Add the pomegranate molasses and knead a bit more until the mixture has a gum-like consistency and the köfte is ready.
Tips
Be sure to use brown or fine bulgur specifically for köfte.
