Easy Turkish Raw Meatballs
Ingredients
- 3 cups fine bulgur
- 2 cups hot water
- 3 tablespoons tomato paste
- 1 tablespoon hot pepper paste
- 1/2 cup olive oil
- 3 tablespoons pomegranate molasses
- 3 tablespoons isot
- 1 tablespoon red pepper powder
- 1 onion
- 3 cloves garlic
- Salt
- Black pepper
- Red pepper flakes
- Cumin
Preparation
Place the bulgur in a mixing bowl and pour the hot water over it, then stir and set aside while preparing other ingredients.
Grate the onion and squeeze out its juice, then add it to the bulgur mixture.
Mix the isot with the oil and let it sit for 5 minutes, then add it to the bulgur.
Add the tomato paste, hot pepper paste, and all the spices, then knead thoroughly.
Pour in the pomegranate molasses and knead a little more until the mixture is like chewing gum.
The çiğ köfte is ready to serve.
Tips
Always use brown bulgur specifically for köfte.
