Turkish Bulgur Kisir Salad
Ingredients
- 2 cups fine bulgur
- Nearly 2 cups boiling water
Seasonings
- 2 small onions
- 1 heaping tablespoon tomato paste
- 1 heaping tablespoon pepper paste
- 100 ml olive oil
- 3 tablespoons pomegranate molasses
- Juice of 1 small lemon
- 1 teaspoon red pepper flakes
- 1 teaspoon sumac
- A pinch of black pepper
- A pinch of cumin
- Salt
Herbs
- Finely chopped parsley, as desired
- Finely chopped fresh mint, as desired
- Finely chopped lettuce, as desired
Vegetables
- 1 tomato, chopped
- 1 small cucumber, chopped
- 1 green chili pepper, chopped
- 3 green onions, chopped
Preparation
Place fine bulgur in a suitable bowl, add boiling water, stir once or twice, cover, and let it sit until it absorbs the water and swells for about 15 minutes
Meanwhile, heat olive oil in a pan, add chopped onions, and sauté lightly
Add tomato paste and pepper paste to the pan and sauté, then pour the mixture over the bulgur
Add salt and spices, mix well
Add lemon juice and pomegranate molasses, stir to combine
Chop tomato, cucumber, green chili pepper, parsley, mint, lettuce, and green onions finely, then add them to the bulgur mixture
