Dressing

Preparation
Cook quinoa according to package instructions using vegetable stock for added flavor.
Massage the kale with a squeeze of fresh lemon juice to make it easier to digest.
Prepare the vegetables by using tomatoes, carrot, chickpeas, cucumber, olives, artichoke hearts, and mixed leaves.
Assemble the bowl with kale and spinach as the base, then add the prepared vegetables.
