Tempeh and Turmeric Hummus Salad

Ingredients

  • rocket leaves
  • radish
  • potato salad
  • fried tempeh strips
  • celery
  • seeded sourdough baguette
  • rainbow baby tomatoes
  • cucumber
  • houmous with turmeric
  • beetroot
  • olives

Dressing

  • tahini
  • lemon juice
  • pink salt
  • black pepper
  • soy sauce
  • garlic
  • maple syrup
  • water

Preparation

  1. Prepare the dressing by mixing tahini, lemon juice, pink salt, black pepper, soy sauce, garlic, maple syrup, and thinning with water.

  2. Fry the tempeh strips until golden brown.

  3. Assemble the salad by arranging rocket leaves, radish, potato salad, fried tempeh strips, celery, seeded sourdough baguette, rainbow baby tomatoes, cucumber, houmous with turmeric, beetroot, and olives on a plate.

  4. Drizzle the maple tahini dressing over the assembled salad.
