Plant-Based Rice Lentil Salad

Ingredients

  • Tricolor blend rice
  • Lentils
  • Veggie broth
  • Tomatoes
  • Red onions
  • Green olives
  • Cucumber

Dressing

  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1 tbsp maple syrup
  • 2 tsp soy sauce
  • 1 tsp garlic chili sauce or 1/4 tsp garlic powder
  • 1 tsp mustard
  • 2-3 tbsp water

Preparation

  1. Cook tricolor blend rice according to package instructions

  2. Cook lentils in veggie broth until tender

  3. Chop tomatoes, red onions, and cucumber

  4. Whisk dressing ingredients together except water.

  5. Once combined, slowly add water and whisk together until desired consistency is achieved.

  6. Combine all ingredients in a bowl and mix well
