Roasted Mediterranean Vegetables
Ingredients
- 2 courgettes
- 2 aubergines
- 2 red peppers
- 2 red onion
- 2 garlic cloves
- 1 tbsp mixed dried herbs
- 3 tbsp of olive oil
- 3 tbsp of balsamic vinegar
Preparation
Pre-heat the oven to 200c/180c fan
Prep the veg
Cut the courgettes, aubergines, red peppers and red onions into thin strips and place them in a large baking tray
Stir together the garlic, mixed dried herbs, olive oil, and balsamic vinegar
Mix through the veg so they're all covered
Roast in the oven for 40-45 minutes, stirring halfway through cooking
Serve and enjoy!
