Spaghetti Stuffed Zucchini Boats Dish

Ingredients

  • 4 zucchini
  • 1 diced onion
  • 1 lb ground beef
  • a little bit of oil
  • 1 tsp garlic
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce
  • feta cheese

Preparation

  1. Preheat oven to 400°F.

  2. Cut 4 zucchini in half and scoop out the middle into a bowl for later use.

  3. Grease a baking pan and place the zucchini halves in it, then bake at 400°F for 15 minutes.

  4. While zucchini is baking, heat a skillet over medium heat and add a little oil, 1 diced onion, and 1 lb ground beef.

  5. Season the mixture with 1 tsp garlic and 1 tsp Italian seasoning, then cook until the beef is browned, breaking it up.

  6. Add the scooped zucchini flesh to the skillet when the meat is almost done and mix it in.

  7. Stir in 1 cup marinara sauce to the mixture.

  8. Remove the baked zucchini from the oven and stuff the halves with the meat mixture.

  9. Top with feta cheese and bake for an additional 10 minutes.

  10. Remove from oven and enjoy the dish.
