Spicy Carrot Rice with Vegetables
Ingredients
- 200g/7 oz/1 cup basmati rice
- 2 large carrots, cut in strips
- 200g/7 oz green peas
- 1/2 tablespoon olive oil
- 1/2 onion, peeled and chopped
- 1 garlic clove, peeled and crushed
- 1/2 teaspoon curry powder
- 2 drops Tabasco sauce
- 1/2 teaspoon cayenne pepper
- Pinch of salt
Preparation
Cook the basmati rice with a pinch of salt following the instructions on the packet.
Cook the carrot and green peas for a few minutes.
Heat the olive oil in a pan and cook the onions and garlic until soft.
Add the cooked rice and mix it thoroughly with the carrot and green peas.
Add the curry powder, Tabasco sauce, and cayenne pepper.
Serve on its own or with a side dish.
