Spicy Chickpea Stuffed Sweet Potato
Ingredients
- 1 sweet potato
- chickpeas
- chile lime seasoning
- zucchini
- jalapeños
- salsa
Preparation
Bake sweet potatoes at 400°F for 50 minutes.
Drain and pat dry chickpeas.
Sprinkle chickpeas with chile lime seasoning.
Broil chickpeas for 10 minutes on the bottom shelf.
Sauté zucchini and jalapeños.
Stuff the baked sweet potato with chickpeas and top with sautéed vegetables and salsa.
Make a bunch of sweet potatoes at once for easy meals throughout the week.
