Baked BBQ Tofu with Avocado and Sweet Potato

Ingredients

  • extra firm tofu
  • 1/4 cup BBQ sauce
  • sweet potato
  • 1/2 avocado
  • zucchini
  • kale

Preparation

  1. Press the extra firm tofu by wrapping it in a dish towel, placing it between two plates, and putting heavy objects on top for 30 minutes.

  2. Cut the tofu into cubes.

  3. Marinate the tofu cubes in 1/4 cup of BBQ sauce for 30 minutes in a glass pan.

  4. Preheat the oven to 425°F.

  5. Add more BBQ sauce to the tofu and bake for 20 minutes.

  6. Remove from oven, add more BBQ sauce to coat, and bake for another 20 minutes.

  7. Broil for 2 minutes.

  8. Bake a sweet potato in the oven while the tofu is baking.

  9. Mash half an avocado.

  10. Sauté zucchini and kale.
