Baked BBQ Tofu with Avocado and Sweet Potato
Ingredients
- extra firm tofu
- 1/4 cup BBQ sauce
- sweet potato
- 1/2 avocado
- zucchini
- kale
Preparation
Press the extra firm tofu by wrapping it in a dish towel, placing it between two plates, and putting heavy objects on top for 30 minutes.
Cut the tofu into cubes.
Marinate the tofu cubes in 1/4 cup of BBQ sauce for 30 minutes in a glass pan.
Preheat the oven to 425°F.
Add more BBQ sauce to the tofu and bake for 20 minutes.
Remove from oven, add more BBQ sauce to coat, and bake for another 20 minutes.
Broil for 2 minutes.
Bake a sweet potato in the oven while the tofu is baking.
Mash half an avocado.
Sauté zucchini and kale.
