Sweet Potato Toast Three Ways

Ingredients

  • 1 large sweet potato
  • kale
  • mushrooms
  • organic peanut butter
  • granola
  • 1/2 banana
  • 1/2 avocado

Preparation

  1. Take 1 large sweet potato and slice it into toast shape; if too tough to slice, microwave or boil to soften.

  2. Slice the potato thinner for faster cooking.

  3. Preheat oven to 500F or use the Broil setting.

  4. Add the potato slices to a baking sheet, place on the bottom shelf, and bake for 10-12 minutes until soft.

  5. Top with sautéed kale and mushrooms, organic peanut butter, granola, half a banana, and half a mashed avocado.

  6. These toasts can be prepared in 15 minutes and are meal prep friendly; make them the night before or a few days ahead and reheat in the morning.

  7. Cut slices thinner to reduce baking time, and feel free to switch up toppings like mashed avocado or peanut butter with cinnamon.
