Sweet Potato Toast Three Ways
Ingredients
- 1 large sweet potato
- kale
- mushrooms
- organic peanut butter
- granola
- 1/2 banana
- 1/2 avocado
Preparation
Take 1 large sweet potato and slice it into toast shape; if too tough to slice, microwave or boil to soften.
Slice the potato thinner for faster cooking.
Preheat oven to 500F or use the Broil setting.
Add the potato slices to a baking sheet, place on the bottom shelf, and bake for 10-12 minutes until soft.
Top with sautéed kale and mushrooms, organic peanut butter, granola, half a banana, and half a mashed avocado.
These toasts can be prepared in 15 minutes and are meal prep friendly; make them the night before or a few days ahead and reheat in the morning.
Cut slices thinner to reduce baking time, and feel free to switch up toppings like mashed avocado or peanut butter with cinnamon.
